As I mentioned in my last post, I was able to attend a really fun blog conference in San Francisco last Friday. In attendance were most of the nation’s best food bloggers and quite a few professional chefs, along with many delicious food brands. In between informative lectures I was able to roam the halls of the Intercontinental Hotel to try various foods, fill up my swag bag, and be all around thankful for a fun day out of the office. One of the best recipes I tried was a homemade gnocchi with pumpkin-sage cream sauce. I found a similar recipe today and tried it out for dinner. It was one of the best meals we’ve had in recent memory, so I’m passing it along. Let me know if you try it!

Tip: I cheated and bought whole wheat gnocchi at Trader Joe’s, which was so easy and yummy. No need to make your own gnocchi when TJ’s makes it already.

Recipe for Pumpkin-Sage Cream Sauce, from Country Living

1 cup(s) heavy cream

1/2 cup(s) pumpkin puree

1/4 cup(s) fresh-grated Parmesan

16 fresh sage leaves, sliced into thin strips

1/2 teaspoon(s) salt

1/4 teaspoon(s) fresh-ground pepper

1 tablespoon(s) unsalted butter

Directions: Combine the cream, pumpkin puree, Parmesan, sage, salt, and pepper in a medium saucepan over medium heat. Simmer the mixture until slightly thickened, 10 to 12 minutes. Remove from heat and stir in butter. Toss with cooked pasta and serve immediately.

At work I’ve been reading a lot of food blogs in preparation for a conference I’m attending this week called BlogHer Food in San Francisco. I’m really excited to go because it’s one of the largest blog conferences for foodies. I realize I’m not a food blogger, nor will I probably ever be, but after visiting so many amazing food blogs I got inspired to create my own post about a recent adventure in the kitchen.

A few weeks ago, after months of talking about it, I finally made jam. Joy was visiting from Portland, so Sharon and I dragged her to Old Soul at Forty Acres for breakfast, followed by a quick visit to the Oak Park Farmer’s Market for ingredients. We decided to see what the market had in stock before determining what type of jam we’d make. We settled on a strawberry peach jam. Unlike professional chefs, we had no recipe in mind so we guessed at the amount of produce we’d need. Probably not the smartest idea when you’re making jam…but…whatever.

Next we ran over to Target for Mason jars, as evidenced by this photo of me grinning like a Cheshire cat.

We came back to my apartment, much to Jonathan’s excitement, and took over the kitchen while he resumed his typical Saturday morning position on the couch. Joy made guacamole for us to devour while Sharon and I started prepping the fruit.

After looking at several recipes, we decided to make up our own version of jam. Surely we wouldn’t need as much sugar as the recipes called for, right? (It was SOOO much sugar!) We soon found out that, yes, jam needs lots of sugar to get thick. We stirred, and stirred, and stirred for a loooooong time. Joy managed to burn herself about 18 times through this process.

Finally we were able to pour and then seal the jam up using a nifty contraption I bought at Target.

Surprisingly, the jam turned out really well. Jonathan and I already finished our first jar. I’m already dreaming about a visit to Apple Hill in a few weeks so I can try my hand at apple butter and applesauce.

Sweet treat!

It’s been an exciting night in the kitchen. So exciting that my eyes are still puffy from the onions.

I love to cook, I love to read, and I love trying new things. The result is I often embark on ambitious recipes that end up taking a lot of time, and honestly, a lot of money. Yesterday I was on Worthington Wire for the first time. This site is new, started by the same gal who started Blissfully Domestic. Basically, it’s like a Drudge Report for girls! (If you don’t know what Drudge Report is then, well, you need to get on Wikipedia and get up to speed. Come on here people, this is 2009 and there is SO MUCH on this World Wide Web that some days I can’t even handle the excitement. Dramatic, I know.)

Anyway, after hopping around on Worthington Wire for a bit, I found a few new blogs that I’ll certainly be following. One is called The Simple Dollar which is a great blog in uncertain times such as these. On this site I found a recipe for really easy, really cheap breakfast burritos that I’m anxious to try. First though, I decided to make regular burritos. I’m a picky lunch eater, and sometimes our evenings are super hectic. I figured that if I have a stock of homemade frozen burritos that it might make life a little easier, and a little cheaper. As I type, I’m waiting for my homemade Spanish rice to finish. Then I’ll be setting up an assembly line to produce 24 burritos, which each cost only 66 cents.

Now, get excited. This is where I get totally domestic. Proverbs 31 woman, watch out. I found another site called FoodieView. Here you just type in random ingredients that you have in your fridge or pantry. Search results produce a list of recipes that use all those ingredients you enter! For instance, I entered “mushrooms” (because I had a whole bunch from last week’s Chinese food that were going to go bad) and “risotto.” Quite a few different recipes came up but I decided to use one that called for chicken stock, because well, I have a lot of it (also from last week’s chicken adventure).

As luck would have, my Spanish rice also called for garlic, onions, and chicken stock. I ended up substituting Romano cheese for pepper jack, because I had purchased a huge chunk for the burritos. The result? I spent only about an hour in the kitchen tonight with my (eager?) assistant but got two great meals for relatively inexpensive. They have very similar ingredients but turn out with completely different tastes. Yum.

For the garlic mushroom risotto recipe, click here. It turned out soooo good. So, can I get some applause for my domesticity? Now all I need are triplets.

I hadn’t. But, that didn’t stop me from carting myself out on a rainy Sunday to see his live (and FREE!) cooking demonstration at the downtown library. I got there an hour early, by myself, to get a good seat. In typical bookworm fashion I brought a thick read and zoned out the paparazzi-like crowd until his demo started. Yan has been on various cooking television programs since 1982, so he knew how to entertain, and teach, an eager mass of people. Click here to read the Sac Bee article about his demo.

I have never eaten better food than when we traveled in China. For three months we ate so many types of regional dishes, and only a handful of times did I really miss American food. There was always so many different kinds of food to try, and Jonathan and I left every meal stuffed. Someday I hope to cook Chinese food that even remotely resembles what we tasted there.

After Yan’s demo (where he chopped a whole chicken up in 18 seconds, and cut a cucumber into sixty perfect slices), I headed to TJ’s for groceries. With motivation larger than actual skill, I purchased a whole chicken. Then I returned home to watch You Tube videos on how to carve the little guy. I didn’t completely fail, but, I’m really glad no one was home to see my pulling bones apart and flinging chicken skin across the kitchen.

My efforts completely paid off. Today I have homemade chicken stock in the freezer for my next soup recipe, and we made a great meal last night that was somewhat quick and very easy. Yan’s secrets? A marinade made with soy sauce, beer, and corn starch.

Bring your chopsticks and come over for a meal!

p.s. can you believe this picture!? Who would buy a whole chicken in a can. eeewwwwwww! credit to: disneymike.)

Snowball cookies (aka Russian Tea Cakes): I loved making these at my Aunt Debbie’s house as a kid. They are so cute!

Grasshopper Pie: My mom makes this for Christmas and it’s delicious. I especially like this pie because it’s different than most Christmas desserts, but still very festive. I am not posting my mom’s recipe, but found one that looks very similar. Mmmmmmmm good.

Bread pudding: I tried this Real Simple recipe last night for the Melvin’s Christmas party. It was very easy. I actually substituted the croissants with ordinary dinner rolls because the grocery store didn’t have croissants. The dinner rolls were much cheaper and tasted great. Reminds me of the Westmont President’s Christmas Party.

William Sonoma Peppermint Bark: Another easy treat that requires no baking.
Dear Martha,

You’ve taken a lot of slack over the last few years. The whole going-to-jail thing was a big mess that obviously made me lose a little respect for you. Girl, you should have paid your taxes just like everyone else. That being said, I want you to know you’ve earned back some love from a girl in Sacramento.

Last year I made my very first, homemade apple pie for Thanksgiving. In fact, I made two at the same time– one for Mom’s side of the family and one for Jonathan’s family. In an attempt to be truly like you, I went all the way up to Apple Hill to pick apples straight from the tree. I wanted those pies to be 100% homemade. (Am I making you proud?)

When I got home, I searched the internet for the perfect crust recipe. For no better reason other than the fact that you’re awesome, I went with your recipe. You did not dissapoint. The dough was easy to manage, easy to roll. I had plenty left over to make dainty holly leaves. Those pies were so darn perfect that I wanted to mail you a picture just to prove my skill.

Today, I set out to recreate last years Thanksgiving pies. I had big plans Martha. Big plans. This year, still holding my head high from last year’s success, I decided to make FOUR pies. One for us, one for Kara, one for the people I tutor, and one to give away to a neighbor or the fire station down the street. I was feeling really good about my homemaker skills, and even better about my kindness for others during the Thanksgiving season.

But, I got lazy. I couldn’t find your recipe for the crust. I didn’t try that hard– in fact– I didn’t try at all. I figured, a pie crust is a pie crust. They’re all the same. Let the record show THEY ARE NOT THE SAME! The Better Homes and Garden cookbook, usually so trustworthy, let me down. The crust was not enough for holly leaves. It was hard to manage. And my pies are just plain ugly. I’m sure they’ll taste fine, but Martha we both know that presentation is also important for any good meal.

I’ve learned my lesson. Next time I bake apple pie, I’ll be searching the internet again for your recipe.

Sincerely,

Lesley

No better sign of fall: squash soup. My mom’s recipe is below for all to enjoy. I promise, it doesn’t get any better than this:

Ingredients:

1 large squash (butternut or acorn are delicious)

Medium onion

1 1/2 oz butter + 3 tbsp for croutons

4 c chicken stock (NOT chicken broth)

Salt

1/2 c cream

Freshly ground pepper

Garnish: nutmeg, parsley, croutons (recipe below requires 4 slices of bread) Parmesan cheese

Make:

Preheat oven to 400. Bake squash in shallow baking pan about 1hr. Cut lengthwise and cool to room temp.

Cook chopped onion in butter over low heat, partially covered until soft and stirring often (about 15 min)

Meanwhile, remove seeds from squash and scoop out pulp. Puree.

Add onions to puree

Cook puree and chicken stock about 10 min until soft. Add the cream and seasonings to taste.

Croutons:

Melt 3 tbsp butter. Mix in chopped bread and freshly grated nutmeg to taste

Cook at 400 for 10 minutes, flipping after 5

Serve soup with croutons, parsley, Parmesan cheese and nutmeg. Sooooooo good!!!
